The only religion that originally disapproved rituals was actually Buddhism. But years later Buddhism has also been ingrained with ritual practice.

Rituals is very important in religion since they act as bridges as far as the communication between man and the divine is concerned. Symbolism, as you also pointed out, is not exclusive to Biblical religion alone because even Buddhism now stress the need for rituals.
